Whole wheat Healthy Banana Loaf – No added Sugar,eggs, and oil
Yes, It’s my birthday and my little son Rehaan made it a worth day! He helped me baking this healthy banana loaf and giving an idea to make it heart shape. I will admit, I have never been a cake person. Till now because of my food allergies that include egg also , I rarely touched my birthday cake. I’m not sure if my palate didn’t like even egg-less store-bought cakes or what, but only when I started baking them myself did I begin to take a liking to the moist delicious soft treat. Also, I am vegetarian, so imagine my excitement when baked the best chocolate cake I have ever tasted, AND made it vegan in the process. Don’t believe me? Try baking it! 2 ripe bananas
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup thick yogurt
1/4 cup finely chopped dates
Chia seeds and flax seeds
2 tbsp flax seed powder + 6 tbsp water ( if you don’t have flax seeds, you can skip. I wanted to avoid eggs and flax seed mix acts as egg replacement. Adding thick yogurt also adds to fluffiness, completely your take whatever you want )
1 tablespoon agave nectar (optional)
Pecans, raisins, almonds
Pre-heat the oven at 350 F.
Mix flax seed powder with water, stir well and leave it aside for couple of minutes.
Mash the banana well with a blender or fork.
Sieve 1 cup whole wheat flour, ½ tsp baking soda, 1tsp baking powder and a pinch of salt (optional) directly in the bowl. Add cinnamon, vanilla essence and mix well. Now add the chopped dates, agave nectar and stir together. Add the mashed banana, yogurt, and flax seed powder mixed with water and stir till it’s combined. Keep stirring till it forms a soft dough.
Now mix in a couple of table spoons of flour with the pecans, raisins, cranberries, almonds, chia seeds and coat well, this will prevent sinking the seeds and nuts. Keep aside
Fold everything together and put this mixture into a greased loaf pan and sprinkle chia and flax seeds on top and also mix in with batter.
Bake for 45 to 50 minutes till its well risen, crusty and little golden on the outside. Insert a wooden skewer right in the center. It should come out clean and that’s when the loaf is cooked.
