When Black eyed peas meet Green Leaves – Fitness Happens!!!

 

A healthy, delicious, low in fat and calories, good alternative source of protein if you don’t eat meat, Iron rich, lowers cholesterol!!! YES this is a medley of blacks eyed peas, tomato, cucumber, spring onions ,avocado, and fresh mint sprinkled with organic mixed sprouts and tossed with lemon and orange dressing. Wrap it with green lettuce, collard green leaves.  It’s fresh, filling, and easy to make! You can have this as a salad or as a main course.

Ingredients

For the salad

  • 2 cups soaked and boiled organic black eyed peas (lobia)
  • 1 cucumber, peeled and chopped
  • ½ cup spring onions finely sliced and chopped.
  • 1 avocado, cubed
  • 1 red ripe tomatoes, chopped
  • few twigs of fresh mint
  • 1 cup mixed sprouts
For the Lemon orange dressing
  • 1 tablespoon freshly squeezed lemon
  • 1 tablespoon orange juice (optional)
  • 1 Tablespoon organic extra virgin olive oil
  • 1 clove of freshly minced garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • salt and pepper to taste
Method:
  1. Heat a tablespoon of oil in a pan.
  2. Pour garlic and let it get tempered in hot oil.
  3. Add all the powders (cumin, coriander, turmeric)
  4. Throw in the boiled black eyed pea at this point. Mix well.
  5. Add black pepper and salt.
  6. Mix everything nicely, when all the spices are incorporated switch off the gas.
  7. Pour freshly squeezed juice (lemon or orange).
  8. Mix the cooked beans with rest of the salad ingredients.

Serving and Plating

Arrange the leaves on a serving plate. Pour the mixed beans and salad and garnish with sprouts and mint.
