Wheat Free- Oats Herbed Crackers

Crackers are one of those things that we all eat and we end up buying instead. So thought of baking my own cute little thins. They turned out great—better than I expected, actually! The kind of cracker you eat in one bite, or soak in soup or relish with humus or guacamole.

Ingredients:
  • 2 cups old-fashioned oats (flour)
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 ripe Fresh Hass avocado, pitted, peeled and mashed
  • 1 tables spoon olive oil
  • 2teaspoon flax seeds,
  • 2 teaspoon chia seeds
  • 1 tsp dried rosemary
  • 1 tsp dried sage
  • 1/2 tsp thyme
  • water (or more, as needed)
  • Garlic powder
Instructions:
  1. Heat oven to 375F. Line the baking tray with aluminum foil and spray with non-stick Cooking spray.
  2. Grind the oats and make it into flour.
  3. Add in all the dry ingredients- Oats flour, baking powder, chia seeds, flax seeds, garlic powder, mixed herbs and salt in a medium bowl.
  4. Cream together oil, avocado in a large bowl.Stir in oat and herbs mixture to avocado mixture and stir until combine.
  5. Knead everything to make a dough. Use water if need be.
  6. Transfer the mixture onto lined baking sheets.
  7. Roll out the dough using hands or rolling pin. Try to get it as thin as possible, about 1/8-1/4 inch thick.
  8. Cut with your favorite cookie cutter, keeping the crackers 2- inches apart. If you don’t have a cookie cutter, pierce with a fork, prick holes in the center and place on a baking sheet.
  9. Bake for 18 to 22 minutes, until golden.
  10. Transfer to wire racks to cool completely.
  11. Allow to cool completely and store in an air tight container.
