Baby potatoes-Tomatoes-Onions (Side dish)

There ain’t nothing better in life than true love and a homegrown tomatoes
This warm baby veggies salad is an easy recipe. Not fancy—just simple boiled potatoes, fresh tomatoes and shallots tossed with tanginess. This is easy to make and taste great with grilled veggies.
Especially for my friend, who has great harvest of tomatoes?

Ingredients
  • Baby potatoes 250 grams (1 box)
  • Shallots (small onions- also known as Sambhar onions) 15-20
  • Cherry tomatoes 15-20
  • Olive Oil
  • Sea salt to taste
  • Black peppercorns,crushed to taste
  • Fresh basil leaves 15-20 – 1 cup packed
  • Brown sugar/jaggery 1 1/2 teaspoons
  • Red chillies,crushed 1/2
  • Vinegar 4 teaspoons ( You can use any, I like the flavor of Balsamic vinegar so used that)
  • Onion seeds (kalonji) 1/4 teaspoon
Method
  1. Pierce the potatoes well with fork with peel on it. Parboil them or keep in microwave for 3 minutes.
  2. Heat 3 tbsps oil in a non stick pan and add potatoes. Sprinkle sea salt over them. Add crushed peppercorns to potatoes, mix, cover and cook.
  3. In a seperate pan heat 2 tbsps oil. Add shallots, cover and cook. Make small slits on cherry tomatoes and add to the onions. Sprinkle sea salt and toss. Cover and cook.
  4. Finely chop fresh basil leaves. Add brown sugar/jaggery, crushed red chillies, vinegar to onion-tomato mixture and mix. Cover and continue to cook.
  5. Add more basil leaves, mix and switch off heat. Sprinkle onion seeds and crushed peppercorns on potatoes and toss.
  6. Put potatoes in a serving bowl, put onion-tomato mixture over them and serve.
