Vegan Raw Healthy Collard/Lettuce Burrito
The word raw vegan diet – is stuck on my mind these days. People dream about vacation, Islands, and I dreamt about this raw vegan Burrito. So the very first thing in the morning was to convert dream into reality!!!! I went for the groceries to famers market. I was so excited to see the freshness of the fruits and veggies. Above all weather was awesome drizzling!!
Let’s start with the recipe. Everything in this recipe is uncooked, raw and trust me YUMMILICIOUS!!!!
Ingredients For Burritos:
- Large Collards Leaves/ Lettuce Leaves
- Colored Bell Peppers: 2-3
- Cucumber: 1
- Small Chopped Radish
- Shredded Carrots: 1-2
- Lemon Juice: 3 Lemons
- Tomatoes
- Small Bunch of Cilantro and Basil
- Green Onions
- Spinach Leaves: Handful
- Sprouts – of your choice
- Avocado: 1
- Red Onion
- Celery Bits
- Fresh Fennel Bits
Ingredients For Colorful Dressing!
- Colored Peppers: 2 (more if desired)
- Cabbage: Less than the quarter cup
- Sesame Seeds: 1 table spoon
- Chia Seeds: 1 tea soon
- Lemon Juice: 2 Lemons
- Green Onion: Few Sprigss
- Rosemary
- Garlic Cloves
- Half Onion
- Balsamic Vinegar
- Fresh Mustard/Mustard Sauce: 1 teaspoon
- Spicy Pepper
- Salt- optional as per taste
INSTRUCTIONS:
- Take your collard leaf or lettuce leave and destem the back end. This is just to make sure while folding the leaf doesn’t breaks.
- Blend the ingredients for the dressing or spread!
- Spread the leaves on a chopping board.
- Spread the dressing evenly on the leaf.
- Chop, slice, and dice all veggies and ingredients mentioned and layer them on top of the dressing on the leaf.
- Top with a slice of avocado and onions.
- Add sprouts and apply more dressing if you need.
- Fold in the sides and wrap around the ends.
- Flip over the burrito and diagonally cut it in half with a knife to displays beautiful colors inside to wrap.
