Savory Granola mix – Chivda

Healthy snacking is a great way to overcome hunger pangs in between meals. Satisfy after-work hunger with this wonderful snack. Feed your craving with this crunchy and great treat.

To snack the sensible way, go to your pantry and grab all the left cereals, oats, seeds, and nuts of your choice. You can do variations based on your taste buds. The one I made today  can be baked in oven or roasted in a big wok on the stove top with few drizzles of oil.  I used the wok. If you want to avoid nuts, replace the nuts with roasted chickpeas, puffed amaranth, Oats, quinoa or any other grain flakes or seeds such as sunflower, pumpkin, watermelon, sesame.

Ingredients:
  • 2 Teaspoon organic olive oil
  • 1/2 teaspoon mustard seeds
  • Pinch of carom seeds- optional
  • 8-10 curry leaves
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon salt or to taste
  • Red chilly powder or black pepper – as per taste
  • 1 cup flat rice or poha
  • 1 loaded cup oats
  • ½ cup lotus seeds- toasted in microwave for 45 seconds
  • Citric Acid – 1/4 tsp (optional)
  • ½ cup baked bhel mix( includes puffed rice and savory gram lentils)-optional
  • ½ cup pecans, almonds, peanuts, pumpkin seeds
  •  1 tablespoon coconut- thinly sliced
  • 1 cup frosted flakes/corn flakes
  • 1/4 cup each of raisins or cranberries
  • 1/2 cup Roasted chickpeas
  • 2 Tablespoons sesame seeds
  • 1 teaspoon – flax seeds, chia seeds
Method:
  1. Heat the oil in a wide pan or wok over medium high heat.
  2. Add mustard seeds when hot. When mustard seeds crackle, add carom seeds.
  3. Add curry leaves. Lower the heat to medium low.
  4. Add raisins, cranberries, coconut, and nuts. Keep stirring for few seconds.
  5. Add Roasted chickpeas and seeds( watermelon/sunflower seeds, sesame seeds).
  6. Now add turmeric powder, Salt & Citric Acid Powder. Adding citric acid powder is optional.
  7. Mix well for few seconds.
  8. Add the oats.
  9. Now add flat rice.
  10. Mix well until the turmeric color is well distributed(about a minute). Mix very well till all the mixture is yellow and no white is visible.
  11. Now mix rest of the ingredients such as lotus seeds, chia seeds, flax seeds.
  12. Take off heat. Add 1/4 tsp chili powder or black pepper for spice. Taste and adjust salt.
  13. Mix well and let  it cool before serving or storing in an airtight container. You can keep this for  few weeks.
