Quinoa Comfort Warm Bowl

 

This tiny little cute nutty seed seems to be found in all the stores now. No wonder, as it contains lot of protein, all nine essential amino acids. It’s perfect for all different kinds of salads, breads, and meal types.
Serving today a filling comforting hearty warm bowl.

Ingredients
  • 100 gms quinoa
  • 250 ml Water
  • 1 tablespoon coconut oil
  • 1/2 teaspoon cumin seeds
  • 6-8 curry leaves
  • 2 Small green chilies, finely chopped (Optional)
  • 1 small shallot or onion, finely chopped
  • 3-4 cherry tomatoes or 1/2 a sliced tomato, finely chopped
  • 1 cup mixed vegetables (green beans, Spinach finely chopped, fenugreek leaves finely chopped)
  • 1 tablespoon shredded Beets ( for color this is optional)
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon Cumin powder
  • Salt as needed
  • Fresh coriander leaves, chopped for garnishing
Method

1. Wash quninoa. Put in a pressure cooker, add water and all the chopped vegetables, salt, turmeric, asafoetida few drops of oil). If you dont have a pressure cooker, cook in a pan with a lid for 12-15 minutes.
2. Let is cook for 2 whistles.
3. Turn off the gas.
4. In a small pan. Add rest of the oil. Let is heat.
5. Add cumin seeds. Let them crackle.
6. Now add curry leaves, ginger garlic. Add the shallot and let it cook. Add cumin and coriander powder. Once nicely cooked pour this tempering to the cooker  vessel with quinoa and veggies.
7.Cook for 2-3 minutes. I like the soupy consistency. If you want little thick, let it cool down. Garnish with cilantro, spring onions, beets. This is optional.
8.Serve with mint yogurt and mint chutney.
