Protein Packed Parfait
If you like yogurt, granola and fresh fruit, you’ll love parfaits. Here is a homemade parfait– it almost looks like a sundae. It is really loaded with good-for-you ingredients.
INGREDIENTS:
- 1 cup Greek yogurt- if greek yogurt is not available use hung curd (hung curd is nothing but curd whose whey has been drained completely)
- 1/3 cup old fashioned oats, uncooked
- 1 teaspoon chia seeds (optional)
- 2 Tablespoons milk (almond, cow, soy, etc.)
- 1 cup mixed fruit and berries (banana, raspberries, blueberries, strawberries)
- Garnishes (nuts, cherries, toasted oats or granola, nuts)
- 1 tbsp honey/agave nectar/grade A maple syrup
INSTRUCTIONS:
- In a bowl combine yogurt, oats, chia seeds, honey/agave nectar/grade A maple syrup and milk.
- Stir to combine then layer half in a wide-mouth container.
- Add half the fruit and berries then layer in remaining yogurt mixture and berries.
- Refrigerate overnight. Enjoy chilled for the breakfast.
