Patrode- Colocasia leaf rolls (Himachali appetizer)

 

Patrode is Himachal Pradesh appetizer made with colocasia leaves. Fresh colocasia  leaves are layered with spiced gram flour and various spices paste. This can be steamed, baked or fried.

Ingredients
  • 5-10 Arbi leaves (Colocasia leaves)- I used 5 leaves to make one roll
  • Fresh Turmeric leaf- Optional
  • Chickpea flour – 1 cup
  • Coriander powder – 2 tsp
  • Cumin powder- 2 tsp
  • Red chili powder – ½ tsp
  • Turmeric powder – 1 tsp
  • Dry mango powder– 1 tsp
  • Mustard oil- 1 tablespoon (Optional)
  • For Garnishing:
  • Fresh coriander or cilantro leaves
  • Chaat masala
  • Oil
Method:
  1. Take the colocasia leaves and wash them properly without breaking them.
  2. Take chickpea flour and make a thick paste by adding salt, red chili powder, turmeric powder, coriander powder,cumin powder, salt,dry mango powder  and mustard oil if you like the flavor.  Add water slowly and make a thick paste that can be applied uniformly on the leaves. Skip adding mustard oil if you don’t like.
  3. Take the arbi or colocasia leaf and keep it facing down. Apply a layer of chickpea flour paste on it. Place another leaf and apply the paste. I did with 5 leaves so that it gives good layered texture.
  4. Roll the leaf so that chickpea paste remains intact.
  5. It can be covered with turmeric leaf from outside if available and tied with a thread.
  6. Steam cook these rolls in a steamer or bake. Make sure not to over steam.
  7. Set aside to cool. Cut into small slices . It will look like spring rolls.
  8. Heal 1 tsp oil in flat pan. Cook the cut slices  until they are crisp.
  9. Remove from heat.  Place in a serving plate.
  10. Sprinkle some  spices like chaat masala and fresh coriander leaves.
  11. Enjoy with warm ginger tea.
