Nutritional Yeast –My Superfood & B12 Source
Being Vegan is not easy and can lead to low levels of Vitamins such as B12. Vitamin B12 is a genuine concern for utterly plant-based eaters like me, so it causes a fair amount of concern. I had low levels of B-12 earlier but introducing nutritional yeast has helped me a lot.
Yeast…No way!!! Yes even I am not a big fan of active yeast which is used as leavening agent in breads and other baking items.
Nutritional yeast is completely different. It is DEACTIVATED YEAST and not a replacement of active yeast. This is a flaky yellow mixture filled be B12 vitamin and loved by vegans everywhere. Nutritional yeast makes an wonderful vegan substitute for parmesan cheese.
It is a complete protein, a good source of vitamins. It is dairy and gluten free. Most of the brands are fortified with B-12. Check the labels before buying.. For vegans, this is an essential addition because they are susceptible to B-12 deficiency since the vitamin is usually found only in animal-derived products.
Here are a few ways I use it:
- Sprinkle it over your bread slice or cracker
- Mix it into tofu, or curries
- Sprinkle in salads.
- Blend it into a basil-spinach-vegan pesto
- Simmer it in gravy or soups
- Sprinkle or add where you want to add cheese.
- Kale Chips
- Quinoa-Stuffed Peppers
- Salad dips
