Lettuce Wraps with Fenugreek Paneer Stuffing #KETO-MODE-ON#

These keto friendly wraps are definitely waistline-friendly too.  You can lighten things up by using fresh homemade yogurt in place of any store bought dressing.

Ingredients

1 cup packed chopped fresh fenugreek leaves (Methi Leaves)
1/2 cup Paneer, grated finely
1/2 teaspoon Cumin Seeds
1 small Onion, finely chopped (optional- check macros)
3 Garlic Cloves, chopped
5 finely powdered Almonds
1/8 teaspoon Turmeric Powder
3/4 teaspoon Red Chilli Powder
1 teaspoon Coriander Powder
3/4 cup Water
1 teaspoon coconutOil
Salt to taste

Method
  1. Heat 1-teaspoon of coconut oil in a  pan over medium flame. Add cumin seeds. When they start to pop, add finely chopped garlic. Once it turns translucent add onion.
  2. Saute until the mixture turn soft.
  3. Add chopped methi leaves. The juice will ooze out from the leaves.
  4. Add powdered almonds
  5. Add grated paneer and all the seasonings (chill powder, turmeric powder and coriander powder)and cook for 2-minutes.
  6. Add 3/4 cup water, mix well and cook for 2-minutes. Let it become creamy and soft. Turn off the heat.
  7. On serving plate, place fresh lettuce leaves and pour in the filling. Serve fresh yogurt on the side.
