Ketogenic/Paleo -Nut Candy or Caramelized nuts


Most of us crave for sweets while watching out calories. This recipes comes – perfect for those who are limiting sugar, paleo, Ketogenic, low carb or are diabetic. Xylitol is used as a sweetener in this recipe. It does not  affect blood sugar levels. I like it as a sweetener as is very close to the sweetness of sugar and can easily be substituted and does not leaves the after taste of some sugar free substitutes..


1 cup raw almonds or nuts of your choice
1/3 cup Xylitol
3 tablespoon water
1 tsp vanilla extract
Pinch  of salt
Pinch of cinnamon (optional)


1. Take a pan and heat it. Pour the nuts and toast them.
2.Meantime,  in a bowl – pour Xylitol, water, salt, cinnamon and water. Stir nicely so that it makes a uniform solution.
3. Pour this solution in the pan where nuts are getting toasted.
4. Let it heat up, keep stirring occasionally.
5. Keep stirring until most of the sugar has been coated and begin to crystallize.
6. Take a tray lined with foil or parchment sheet and spread the nuts and allow to cool completely. Store in an air tight container and munch to satiate your sweet tooth cravings.
