Garlic Bread
Yesterday I made garlic bread and used the central part of the bread slices; so had lot of bread crusts in the refrigerator. Thought of making use of them for breakfast. So here is the recipe
The addition of onions, green chilies, fresh herbs like cilantro and vegetables like peas, peppers along with toasted bread crust makes it super delicious. Top it with pan toasted nuts of your choice. Serve with green relish.
INGREDIENTS:
- Bread Crust or Bread Slices: 2-3 cups
- Medium Onion Chopped: 1
- Oil to drizzle
- Cumin Seeds: 1/2 teaspoon
- Mustard Seeds: 1/4 teaspoon
- Turmeric Powder: 1/4 teaspoon
- Red chili powder: 1/2 teaspoon
- Lemon juice: 1 teaspoon
- Green chilies chopped-optional
- Fresh coriander leaves
- veggies of your choice-peas, colored peppers
- Toasted nuts- peanuts, almond, pecans
INSTRUCTIONS:
- In a large wok, drizzle little oil and add in the mustard and cumin seeds.
- Allow the seeds to crackle and add in the onions and green chilies.
- Sauté the onions until soft and tender.
- Add in salt, pinch of turmeric and sauté.
- Once the onions are soft, add in the tomatoes.
- Stir and cook the tomatoes until they turn lightly soft as well.
- Add vegetables of your choice. I added peas and bell peppers.
- Finally add in chopped bread crust pieces.
- Stir well to combine all the ingredients and stir on medium to high heat for a couple of minutes.
- Toast the nuts of your choice on a skillet.
- Serve hot with nuts and relish.
