FailProof Savory Oats and veggies

Low carb diet- Tired of eating milk and oats, try this:

Ingredients
  • 50 gm old-fashioned oats
  • 10ml coconut oil
  • ½ teaspoon cumin seeds/mustard seeds
  • 1 green chili, finely chopped
  • ½ slice of finely chopped red onion
  • ½ teaspoon turmeric
  • ½ teaspoon coarriander powder
  • ¼ teaspoon red chili powder (optional)
  • 1/4 teaspoon black pepper
  • Salt
  • 1 cup fresh mixed veggies (green beans, carrot, spinach, colored peppers cilantro)- see as per diet
  • Chopped cilantro, for garnish
  • 1 teaspoon lemon juice (not optional)

 

Method
  1. Take a pan and on a low flame dry roast oats till they turn crisp. Keep stirring.
  2. Take out in a plate.
  3. In the same pan, heat 10 ml oil. Add 1 tsp cumin/mustard seeds. Stir till the seeds crackle.
  4. Add finely chopped onions. stir and saute till the onions turn translucent.
  5. Add green chilies, saute for few seconds.
  6. Then add finely chopped veggies. Saute for 2 minutes.
  7. Then add 80-100 ml water. Let it come to a boil
  8. Now add the roasted oats.Add salt as required.
  9. Cook covered for 7 to 8 minutes.
  10. once done, then add 1 to 2 tbsp chopped coriander leaves.
  11. Stir and serve oats with mint chutney or lemon juice.
