Earth day special – Vegan Broccoli, Sweet potato patties and tots

Vegetables and fruits and nature’s one of the best gift. We can’t imagine what all can we make with these precious gifts of nature. When we eat raw, bake, boil; the calorie counting become non-existent since most fruits and vegetables are packed with water and minerals, so reducing the caloric content.

Here is the recipe of Vegan healthy Broccoli sweet potato patties and tots

Ingredients:
  •  1 pound Broccoli florets, chopped into small pieces
  •  6-7 mushrooms
  • 4-5 baby carrots
  • ½ cup tofu
  • 2  large sweet potatoes, boiled, peeled
  •  1 onion, finely chopped
  •  3 cups water
  •  Few sprigs of finely chopped cilantro
  •  Salt and freshly ground black pepper to taste
  • Extra Virgin Olive oil ( spray oil)
Directions:
  1. In a large pot, boil water and blanch broccoli, mushrooms, and carrots
  2. Boil or bake and peel the sweet potatoes.
  3. Drain the blanched vegetables and dry with paper towel.
  4. With a potato masher mash blanched vegetables together.
  5. Heat oil in a large skillet over medium heat. Pour oil and sauté onion then add blanched and mashed vegetables for 3-4 minutes.
  6. Turn off the heat.
  7. To this add mashed sweet potatoes and tofu.
  8. Add the salt, pepper cilantro and seasonings of your choice.
  9. Divide mixture into patties with the shape of your choice.
  10. Line a parchment sheet on a baking tray. Spray with little oil.
  11. Preheat the oven to 400 degrees F and place patties on a baking sheet. Bake for 15 minutes or until heated through and crisp on the outside.
  12. Serve hot with Guacamole or dip of your choice,

You can make these patties up to two days ahead and keep them refrigerated until you’re ready to serve them.
