Bruschetta With Tomato-Onion-Goat Cheese & Basil

INGREDIENTS:
  • 2 cups assorted cherry, grape tomatoes, halved (or quartered if large)
  • 1/2 small red onion, finely chopped
  • 3 tablespoons olive oil plus additional for brushing- I used lemon flavored olive oil
  • 3 tablespoons chopped fresh basil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 large loaf focaccia/ ciabatta/baguette, halved horizontally
  • 3-4 garlic clove, peeled, halved
  • Goat Cheese, To Taste
  • Mozzarella/parmesan- any cheese of your choice – 2-3 tbs (optional)
INSTRUCTIONS:
  1. Preheat the oven to 350 degrees.
  2. Add the tomatoes, onions,garlic,Goat Cheese, 2 tablespoons extra-virgin olive oil, red pepper flakes, basil and balsamic vinegar to a bowl. Season with salt, oregano and pepper. Let sit at room temperature while you toast the bread.
  3. Slice bread and add to a baking sheet in a single layer. Toast in the oven until golden brown about 5 minutes this is an optional step.
  4. You can avoid step 3 and top the bread with dressing and spread little bit of mozzarella cheese (optional)
  5. Broil it for 5-6 minutes until cheese melts
