Bruschetta With Tomato-Onion-Goat Cheese & Basil
INGREDIENTS:
- 2 cups assorted cherry, grape tomatoes, halved (or quartered if large)
- 1/2 small red onion, finely chopped
- 3 tablespoons olive oil plus additional for brushing- I used lemon flavored olive oil
- 3 tablespoons chopped fresh basil
- 1 1/2 tablespoons balsamic vinegar
- 1 large loaf focaccia/ ciabatta/baguette, halved horizontally
- 3-4 garlic clove, peeled, halved
- Goat Cheese, To Taste
- Mozzarella/parmesan- any cheese of your choice – 2-3 tbs (optional)
INSTRUCTIONS:
- Preheat the oven to 350 degrees.
- Add the tomatoes, onions,garlic,Goat Cheese, 2 tablespoons extra-virgin olive oil, red pepper flakes, basil and balsamic vinegar to a bowl. Season with salt, oregano and pepper. Let sit at room temperature while you toast the bread.
- Slice bread and add to a baking sheet in a single layer. Toast in the oven until golden brown about 5 minutes this is an optional step.
- You can avoid step 3 and top the bread with dressing and spread little bit of mozzarella cheese (optional)
- Broil it for 5-6 minutes until cheese melts
